I definitely failed at this one having to cook a second pancake as I flipped mine in half and half again trying to fix it (they scramble eggs, flip omelettes and cook pancakes with CHOPSTICKS!). Using no eggs, just rice flour and coconut milk, combined with chicken and prawns, spring onion and bean sprouts. Then added fresh vegetables and herbs and the entire pancake is some how (as the local lady has to take over for me) wrapped in a rice paper and consumed with heavenly chilli, lime and sugar sauce.

Papaya salad
Aka the greatest salad known to man kind. Although hardly healthy with sugar heaped into the amazing chilli, lime dressing and rice chips to serve, the fresh green papayas which are hard to find in parts of the world and flavours of everything combined make this salad irresistible and the reason why I still am not sick of it. I need one of these graters at home so I can whip up my own now with the recipe I’ve got.

Tra Que; vegetable village
Firstly a big thank you to my Aunty for getting me onto Trip Advisor, Im an addict now! This was rated 2nd of the places and things to do in Hoi An and on our bike ride to the beach the day before, we happened to stumble across the sign for the entrance of the path to this village. On arriving I was gobsmacked, I think I rode around the entire time with my mouth wide open. This entire place only harvested fruits, vegetable sand herbs to be grown and picked then sent to the local markets and restaurants (no wonder the food is so heavenly here/ all through Vietnam). All organic and tendered to with extra care, these neat rows provide the most amazing produce, but tucked secretly away from the hustle and bustle. With local music softest playing in the background, this place was the definition of tranquil. We booked in for the cooking class/ food tour, and I was originally going to go alone, but the low season price and sight of this place won the girls over and so the three of us ventured together to learn the basics and secrets of Vietnamese cooking.
Chefs for half a day
This bike ride was so amazing, more amazing in the fact that we were the only ones doing it and only people to be seen (bar the few locals out working or kids on their way to school) to be seen for miles. We rode past this village yesterday along the main rode, but I would have had no idea the beauty that was hidden behind the trees that was unveiled to us!
