I definitely failed at this one having to cook a second pancake as I flipped mine in half and half again trying to fix it (they scramble eggs, flip omelettes and cook pancakes with CHOPSTICKS!). Using no eggs, just rice flour and coconut milk, combined with chicken and prawns, spring onion and bean sprouts. Then added fresh vegetables and herbs and the entire pancake is some how (as the local lady has to take over for me) wrapped in a rice paper and consumed with heavenly chilli, lime and sugar sauce.
